How to make ice cream at home
Do you think the days before when you can again escape from the sun and heat with sweet creamy ice cream or fruit sorbet? We cannot accelerate the approach of summer, but we can definitely share simple recipes on how to make delicious ice cream at home! After all, not a single store cup can compare with home-made ice cream!
1. Creamy ice cream
This is the same classic ice cream according to GOST, but which can be done at home!
Ingredients: 400 ml of milk, 300 ml of cream 33%, 40 g of milk powder, 120 g of sugar, 14 g of corn starch, vanillin.
How to do: Immediately mix the starch in 50 ml of milk until dissolved and leave to stand aside. Mix all the dry ingredients, add about a quarter of the milk and mix. Pour the remaining milk and bring to a boil, stirring constantly.
Mix the starch again, add it to the mixture, reduce the heat and let stand another 2-3 minutes on the stove so that the mass thickens. Pass it through a sieve and set it to cool in an ice bowl. First stir the billet constantly so that it doesn’t get caught in the milk film. After 5 minutes, send to the freezer.
During this time, beat the cream with a mixer in a large bowl and then pour in the cooled milk mixture. Again, put the ice cream in the freezer and get it mixed every 30-40 minutes for the first 3-4 hours. Leave the ice cream there for another 3 hours alone - and it's ready!
2. Homemade Vanilla Ice Cream
Vanilla ice cream made at home is not only a unique taste, but also a delicate texture with a magical aroma.
Ingredients: 250 ml of cream 20-30%, 250 ml of milk, 2 yolks, 5 tbsp. sugar, vanilla stick.
How to do: Pour the milk and cream into the pan and add the vanilla seeds and pod. If you don’t have a stick, you can replace it with a confectionery extract. Bring the mixture to a boil, discard the pod and slowly introduce it into the yolks grated with sugar.
Constantly stir the mass when connecting, so that the eggs do not curl from high temperature. Pour the workpiece back into the pan, simmer until thick, cool and send the ice cream to the freezer for 6 hours.
3. Pistachio ice cream
All pistachio ice cream lovers know how hard it is to find really good. We tell the recipe how to cook it at home!
Ingredients: 200 g peeled pistachios, 500 ml cream 20%, 120 g sugar, 1 egg, a sprig of mint.
How to do: Chop the pistachios in a blender or coffee grinder until flour. Beat the egg with sugar until smooth and, without stopping whipping, pour in about half of the warm cream. The remaining interrupt separately in thick foam and combine the masses among themselves. Gently pour the pistachios, knead, pour the ice cream into the container and leave it in the freezer for 5 hours.
4. Coffee ice cream
Delicious homemade ice cream with delicate coffee notes, a creamy base and a unique aroma.
Ingredients: 400 ml cream 33%, 150 ml milk, 3 yolks, 100 g sugar, 2 tbsp. coffee.
How to do: Heat the milk, pour in it ground or instant coffee. Mix well, boil a little to make the coffee brew, cool and strain. Combine with yolks and sugar, beat well and place in a water bath. Boil for about 10 minutes - you get a consistency of a thick, but soft custard.
Cool the workpiece on ice, and during this time whip the cream. Combine both masses and mix gently with a spatula or mixer at low speeds. Pour the ice cream into a container and send it to the freezer for 7 hours, stirring every 30 minutes for the first 4 hours.
5. Chocolate ice cream
To make this ice cream even more interesting, you can make several pieces with different chocolate!
Ingredients: 350 ml of milk 3.2%, 250 ml of cream 33%, 4 yolks, 200 g of dark chocolate 70%, 100 g of sugar.
How to do: Bring the milk and cream to a boil in one pan and during this time finely chop the chocolate. Add it to the boiling mixture and stir with a whisk until the chocolate chips melt. Beat the yolks with sugar until fluffy and, without stopping whipping, pour the chocolate milk.
Boil the mixture, not boiling, to a state of soft but thick chocolate cream. Pour the ice cream into a mold, cool and let it freeze a little, and then put it in the freezer for 8 hours.
6. Banana Ice Cream
Delicate banana ice cream can be easily made at home and literally from two ingredients!
Ingredients: 2 ripe bananas, 100 ml cream or vegetable milk.
How to do: Cut the peeled bananas into circles, freeze them in the freezer and chop them with a blender. Add cream or vegetable milk (such as almond) in the process. Put the ice cream in a mold and send it back to the freezer to grab a little again.
7. Strawberry Ice Cream
Homemade strawberry ice cream is very light and tender, with a beautiful color and bright taste.
Ingredients: 500 ml of cream 30%, 130 ml of milk, 400 g of strawberries, 150 g of sugar, 3 yolks.
How to do: Beat the yolks with sugar until smooth, tender, pour milk in them and knead again. Boil the mixture in a water bath for about 10 minutes until the custard consistency and let cool. Then combine it with strawberries grated through a sieve.
Whip cream with a mixer until splendid and carefully combine with custard mass. Use a spatula or whisk at minimum speed so as not to lose splendor and airiness. Pour the ice cream into a mold, cool and let it freeze a little, and then put it in the freezer for 8 hours.
8. Ice cream with jam
Sweet jam is the perfect complement for a gentle homemade ice cream.
Ingredients: 500 ml cream 20-30%, 5 yolks, 1 cup jam.
How to do: Bring the cream to a boil over low heat and grind the yolks with jam. Pour the yolks into the cream with a thin stream, constantly mixing to avoid lumps. Boil the mass until it thickens, but do not let it boil. Send ice cream for an hour in the refrigerator, beat with a mixer and remove for another 4 hours.
9. Homemade popsicle on a stick
A classic popsicle glaze comes from a childhood - a win-win choice!
Ingredients: 350 ml of cream, 150 ml of condensed milk, vanillin, a bar of chocolate, a package of butter.
How to do: Whip the cream with vanilla and vanilla sugar in a soft semi-full cream. Pour the condensed milk into a bowl and gradually introduce whipped cream into it. Gently mix the mass with a whisk so that it does not fall and does not become liquid. Pour on the molds, stick the sticks and send to freeze for 5 hours.
Near the end, melt the chocolate in a water bath and mix it with melted butter. Dip the popsicle in the icing and leave it to grab lightly upright. Spread the ice cream on parchment and put it in the refrigerator to completely freeze the chocolate.
10. Black ice cream
A simple recipe for making popular black ice cream at home!
Ingredients: 250 ml of milk 3.2%, 250 ml of cream 30%, 0.5 cups of sugar, 4 yolks, vanillin, 4 tbsp. black sesame paste.
How to do: Mix the milk and half the cream, bring to a boil over medium heat, reduce the temperature and simmer for another minute. Mash the yolks with sugar and gently inject the finished mixture into them. Constantly mix the mass and transfer to a slow fire in a pan with a thick bottom.
Cook and stir the milk mixture for several minutes until it thickens, add sesame paste, knead again and cool. At this time, whip the remaining cream to the peaks, introduce them into the cooled cream, mix, put in the tins and send in the freezer for 5-6 hours. Ice cream is ready!
11. Lactose-free ice cream

Ingredients: 1 cup lactose-free milk, 1 egg, 2 tbsp. Sahara.
How to do: Beat the egg with sugar with a mixer, pour the milk in a thin stream and beat again. On a small fire, bring the mixture to a state close to boiling, stirring all the time. Cool the thickened workpiece and send to the freezer. Pour out and mix periodically, soak for 5 hours and serve.
12. Homemade Sugar Free Ice Cream
In pursuit of an ideal figure, it is not necessary to completely abandon your favorite treats. Just make sugar-free diet ice cream at home!
Ingredients: 50 ml cream or yogurt, 50 g sugar substitute, 1 tbsp. butter, 3 yolks.
How to do: Mix the yolks with a piece of yogurt or cream until smooth. On low heat, pour in the remainder of the base and gray until almost boiling, stirring occasionally. Pour out the sweetener and add the toppings to taste - fruits, berries, fruit puree. Stir again, cool and send the ice cream to solidify for 6 hours.
13. Ice cream for vegans
Homemade ice cream for vegans - it sounds incredible, but in fact it is a whole new world of unusual tastes and textures!
Ingredients: 400 ml coconut cream, 2 avocados, 1/3 cup sweetener, 1 tsp. lemon juice.
How to do: Grind the avocado pulp with a blender until smooth with lemon juice. Open a well-chilled jar of coconut cream and pour the liquid. Beat the harder “creamy” mass with a mixer for several minutes. Add avocado mousse and sweetener gradually, while continuing to mix. Put the ice cream in the freezer for 6 hours and get it mixed several times with an interval of 40 minutes.
14. Fruit sorbet
Refreshing fruit and berry ice cream is delicious and healthy at the same time!
Ingredients: 3 cups of berries, 0.5 cups of orange juice, 2 tbsp. honey.
How to do: Grind all the ingredients in a blender until smooth and pour into a sealed container. Send the mixture for 4 hours to the freezer, but stir it every 30 minutes for the first 2 hours. And if you do not want to wait, then you can serve dessert directly from the blender - as a cocktail or as a topping to other dishes.
15. Frozen ice with berries and yogurt
A very simple recipe for making fruit ice with berries at home. Take a note!
Ingredients: 200 g of strawberries, 200 g of blueberries, 1.5 cups of yogurt, 1/4 cup sugar.
How to do: Beat the berries with a blender separately from each other with a spoon of sugar (you can use any kind), and mix the remaining sugar with yogurt. Lay out all the components in the molds in layers, and for beauty add slices of bright fruit.
